Like any passionate person the Butler likes to share his discoveries. It started with a few friends to whom he sent pieces of advice on which bottles to buy, but then, being in Hong Kong, finding those bottles was either impossible or too expensive. He therefore decided to take the matter in his own hands and imported his favourite bottles directly from where it is produced. HK Butler only partners with under-the-radar domains and maisons so you can discover and experience new flavours. All the wine comes straight from the vineyards of small and local families of producers. All of them located in Burgundy, in the east central part of France. The Butler's ambition is to ease the wine experience of Hong Kong wine lovers as much as he can by delivering premium wines as well as providing wine guidances, tips and hosting unique tasting events. BOURGOGNE PINOT NOIR, MAISON CHANZY, 2015

On the nose, Pinot Noir offers in its first years a diversity of aromas ranging from fresh red fruits (blackcurrant, cherry...). On the palate, it is rather round, with assertive but delicate tannins. About the wine  (RRP: HK$140)
Grape Variety: 100% Pinot Noir Vineyard location: Bouzeron, Burgundy Tasting Temperature: 13 - 15 degrees celsius Food pairing: It is the perfect accompaniment to roast pork or serve as an aperitif with tapas.
 

BOURGOGNE PINOT NOIR, MAISON CHANDESAIS, COEUR DE RUBIS, 2013

The 2013 pinot noir is is round with vibrant fruity notes of blackcurrant, morello cherry and liquorice. About the wine (RRP: HK$150)
Grape Variety: 100% Pinot Noir Vineyard location: Fontaine, Burgundy Tasting Temperature: 13 - 15 degrees celsius Food pairing: It is the perfect accompaniment to Beef, Veal, Game (deer, venison), Poultry

BOURGOGNE PINOT NOIR, DOMAINE DE LA POULETTES, 2016

Coming from an old vine, sprinkled with a few Pinot Beurot reducing its acidity. Elaborated in cold vatting as it is always the case at the domaine du clos des Poulettes and can be drunk young or aged for several years. About the wine (RRP: HK$190)
Grape Variety: 100% Pinot Noir Vineyard location: Corgolain, Burgundy Tasting Temperature: 13 - 15 degrees celsius Food pairing: Ideal with duck and other game birds, casseroles or, of course, stews like beef bourguignon

MERCUREY, DOMAINE MEIX FOULOT, 2017

Gentle and fruity, this wine leans more toward pure pinot noir fruit with only a touch of the dark and tannic undertones that commonly mark Mercurey. About the wine (RRP: HK$300)
Grape Variety: 100% Pinot Noir Vineyard location: Hameau de Touches, Mercurrey, Burgundy Tasting Temperature: 15 - 16 degrees celsius Food pairing: It will accompany poultry, game, beef or veal.

PERLE NOIRE ROSÉE, MAISON LOUIS BOUILLOT, METHODE TRADITIONELLE

Pale salmon blush in colour. Strawberries and cream, grapefruit, biscuit, yeast, white peach and red apple on the nose and palate. Refreshingly crisp and light bodied, creamy mousse and crisp, clean finish with lemon zest on the end. Ever slight hint of sweetness just to round of the slight tannins.

Grape Variety: 88% Pinot Noir, 12% Chardonnay Vineyard location: Nuits-Saint-Georges, Burgundy Tasting Temperature: 6 - 8 degrees celsius Food pairing: Perfect for an impromptu aperitif as well as for a special occasion, this wine will go very well with elaborate desserts.

HAUTES COTES DE NUITS, DOMAINE THEVENOT LE BRUN & FILS, 2018

The nose is fresh and pleasantly split between white fruits and floral notes. On the palate, it has a good balance between fatness and freshness and a good length. About the wine (RRP: HK$240)
Grape Variety: 75% Pinot Blanc, 25% Chardonnay Vineyard location: Marey-les-fussey, Côte d’Or, Burgundy Tasting Temperature: 10 - 13 degrees celsius Food pairing: It will accompany fish dishes or be enjoyed on its own as an aperitif.

PERNAND VERGELESSES, DOMAINE MARATRAY - DUBREUIL, LES VIGNES BLANCHES, 2018

Of a discreet golden colour, it is a white wine with a lively nose of fresh fruit. On the palate, a first lively attack gives way to a warmer evolution and a fatter wine. About the wine (RRP: HK$320)
